Drink on Fleek: The Prickly Pear Chilton

 
A friend of mine, Larissa, just got back from a weekend trip to Amarillo. Bright and early Monday morning she texted me, and I swear you could hear her excitement through the text message. She had a new drink at a bar over the weekend, called a Prickly Pear Chilton, and insisted that I recreate it immediately. Although I may not be an iron chef, cocktail crafting is my jam. 

She was coming over on Wednesday to participate in one of our fantasy football league's draft, so I wanted to make it for her that night. This was easier said than done, seeing as a recipe for this drink did not exist. After a lot of googling, I had found the secret ingredient in her Amarillo cocktail, a brand spankin' new vodka from Western Son, called Prickly Pear Vodka. As far as I know, this vodka is only sold in Texas, so I've included a variation for the rest of the country. My variation will have a few more calories, but will be just as delicious. 

CB's exact words (edited for a PG13 audience) which he screamed after the first sip, "This drink is STUPID EFFING GOOD." 

He's right though, this drink is stupid effing good. It was so good that I made seconds, and then thirds on a school night. 




Prickly Pear Chilton
 
|| Ingredients ||

1.5 oz Western Son Prickly Pear Vodka
-or-
If you're not in Texas and can't get your hands on that vodka, you can use
 0.5 oz Prickly Pear Syrup (like this one) + 1.5 oz Vodka

Juice of 1 Lemon

Soda Water

Ice

Salt for rim

|| Directions ||

1. Place your salt on a plate. Run a cut lemon around the rim of a cocktail glass, and dip the rim in your plate of salt to coat the entire rim of the glass.  

2. Fill glass with ice

3. Add lemon juice, vodka (and syrup if using), and top with soda water

4. Stir with a cocktail spoon.












Go forth, make.
But beware, they are stupid effing good....
....and go down a little too smooth!
